The second day of my weekend
On Saturday, one of my best friends, Emily, came to visit! She has another friend that works for Disney, and we met up with him for brunch at Kouzzina by Cat Cora at The Boardwalk. Kouzzina is a Greek-inspired restaurant featuring Food Network’s celebrity chef, Cat Cora. Surprisingly, neither Emily or I had ever eaten there before. Our food was delicious! I chose the pancakes, and Emily had waffles with mascarpone cheese. Yum! I would definitely go back.
Since we were already in the Epcot area, the next natural step was to use the International Gateway to Epcot and start touring the countries! We had a fun afternoon meeting princesses and sampling different food items. We ordered chips and guacamole in Mexico and were definitely not disappointed. Now I can confirm that the rumors are true, and the guacamole is delicious! Even the salsa was good, although it was different from the type we are used to. The texture and taste reminded us more of barbecue sauce with a kick.
When it looked like it was about to storm, we headed out of Epcot and back to my apartment to wait out the storm. Luckily, it didn’t really storm, just rained for a little bit. Once the rain subsided, we decided to go to dinner at Earl of Sandwich at Downtown Disney. For any of you who have not eaten there, I definitely recommend it! One year Emily and I went to Disney and ate there three times in a week. It’s delicious! Don’t be intimadated by the line, because it moves quickly.
Shortly after dinner, Emily headed home. I can’t wait until the next time we get together. We always have a lot of fun!
