I am home! Early yesterday morning, my friend drove me to the Orlando International Airport, so I could catch my flight to Indianapolis. Before my flight, I bought a magazine and a skinny vanilla latte from Starbucks to enjoy on board. I sat in first class next to a cute older lady who had just finished an annual girls’ trip to Disney World. Disney just follows me everywhere, and we had a nice conversation about her trip and my Disney College Program experience.
The flight to Indianapolis is only about two hours, so it’s short and sweet. I took advantage of the WiFi onboard, and my time flew (haha) by. My mom picked me up from the airport, and we headed home.
My time at home will be too short, but I will be enjoying it to the fullest! I have an action-packed schedule that I am so excited about!
Since I only spent three days in Orlando this week, I decided to whip up a batch of chili to make lunch and dinner time a breeze. Before I went to Publix, I wrote down all of the ingredients to the No Bean Turkey and Sweet Potato Chili from Gina at Skinny Taste. Unfortunately, I left the list at my apartment, so I decided to wing it and buy from memory. What I ended up buying wasn’t exactly what I needed, but, thankfully, my chili still smelled and tasted delicious.
The ingredients (loosely adapted from No Bean Turkey and Sweet Potato Chili):
- 1 package 97% lean ground turkey
- 1/2 cup frozen onion, chopped
- 1 package chili seasoning
- 2/3 of a large sweet potato, diced (I left the skin on.)
- 1 can chopped tomatoes
- 3/4 cup water
- Brown turkey in a large skillet. Throw in the onions and tomatoes.
- Add chili seasoning, diced sweet potato and water.
- Allow to simmer on low heat for 30 minutes stirring as needed.
That’s it. Easy and simple. I’m sure following the original recipe would produce even more delicious results! But for me, my adapted recipe was perfect and provided exactly what I was looking for.
