High Five for Friday!

Happy Friday everyone!

I hope everyone enjoyed the four-day week at work! I know I sure did. It went by so quickly! Now I’ll have time to complete my huge to-do list.

I have a 12-mile run planned that I’m hoping I can still run. Runner injuries are no fun, especially when it’s your foot that’s bothering you. I’m also going to try out some new recipes including this chicken and apple sausage recipe!

Here are five things I was loving this week:

1. Spending time with my mom.

Having a girls’ trip to California was so much fun! I love that my mom and I share this passion for running and that we are able to travel together. While she didn’t start running until about 15 years ago, she has always been active through group exercise classes. She used to teach kickboxing and bootcamp classes!

2. Chicken, Kale and Sweet Potato Soup.

I found this soup with browsing at The Fresh Market and couldn’t pass it up. I love all of those ingredients, so I figured the soup would be delicious. And, it was.

I’m determined to create my own version of this soup. It was pretty pricey for two servings, and I know making my own would yield a lot more for a fraction of the cost.

3. PB S’mores Cupcakes.

Last week, I went to an open house for work and had a mini cupcake that was delicious. Luckily for me, the cupcake recipe was posted on Shelly Bakes Cupcakes (Michelle’s blog, the mastermind behind the cupcake I ate last week.), and I recreated the cupcakes for a cookout we had at work.

I got so many compliments! I definitely recommend this recipe, and I will be trying out some of her other cupcake recipes in the future.

4. Fall Approaching.

Labor Day was the unofficial end of summer, but it still feels like summer in Indiana. I’m excited for cooler weather, festivals, bonfires, apple cider, leaves changing colors, etc., etc. You get the point. Last year, I didn’t have a true Fall because I was working in Disney World. Disney has to create beautiful backgrounds to remind you it’s Fall since it still feels like summer!

This weekend, we are having a cookout! Spiced apple cider, anyone?

5. Football Season.

My family has season tickets to the Colts games and the Illinois games. I’m looking forward to going to at least a few games this season and cheering on my teams! And, obviously, I have to watch the Colts beat the Broncos on Sunday!

It’s still crazy hot here, but I’m so excited for fall related things as well– mainly apple picking and hot cider!     • The cupcakes were a huge hit at work and with the neighbors. You should make them sometime. : )
      You’re so sweet! My foot did bother me during my run, but I still got it in! Heading to dr. this week to find out what’s wrong. I hope you had a wonderful weekend! Have a great week!
