Fluffy Protein Pancakes

Hi-ho, hi-ho, it’s back to work we go! Can we always have three-day weekends? They are simply the best! Plus, a four-day workweek always goes by so quickly.

I hope you all had a great and relaxing Labor Day Weekend! My weekend was so much fun! My mom and I went to Disneyland to participate in the Disneyland Half Marathon Weekend. Look out for my trip report this week.  

Fluffy Protein Pancakes

I always like to start my day off with something delicious for breakfast. Whether it is savory oatmeal or a veggie-packed omelet scramble, I make it a point to sit down and eat something that has all three macronutrients (proteins, carbohydrates and fats).

In the past, I have attempted to make protein pancakes using protein powder, but the pancakes aways turn out too chewy or gummy or protein-powdery for my tastes.

This protein pancake recipe gets it right. Instead of protein powder, it uses egg whites and Greek yogurt. The addition of baking soda really helps to make these pancakes light and fluffy. 

Fluffy Protein Pancakes

  • 1/2 cup oatmeal
  • 1/2 tsp baking soda
  • 1 or 2 tsp cinnamon 
  • 1 tbsp nonfat Greek yogurt
  • 3 egg whites
  • 1 tsp vanilla extract
  • 1/4 cup almond milk
  1. Spray skillet with olive oil cooking spray and place skillet over medium-high heat.
  2. Mix dry ingredients in a bowl then add in wet ingredients, mixing well.
  3. Pour 1/4 cup of batter in the skillet.
  4. Cook until the edges of the pancake begin to harden. Flip once, cooking an additional 1-2 minutes.
  5. Top with your choice of toppings. Enjoy!

Happy Friday, everyone! I hope you all had a great workweek and can fully enjoy the three-day weekend! Now I am beginning to understand how important it is to cherish these, because there are very few of them.

The real world isn’t like college where if I didn’t feel like going to class, I could skip with no consequences. I definitely had a few classes that were exceptions to that! In the Disney College Program, I could trade or giveaway my shifts sometimes, which was perfect for exploring the parks and Orlando-area.

Growing pains!

Anyway, back to my high five for Friday!

 1. runDisney race anticipation

As soon as I’m off work, I am rushing straight to the airport. I cannot wait to meet my my and board our flight! Next stop: LAX. Shortly after, Disneyland! I have been looking forward to this for months!

My mom and I have an action-packed weekend filled with exclusive Disneyland fun (hello, Cars Land!), yummy meal reservations and half marathon running!

2. Taylor Swift’s New Song

I know I am not the only one who loves Shake It Off so much. I can’t help it; it’s so catchy. Whenever it comes on the radio, I find myself singing and dancing along immediately.

If you haven’t already heard it, listen to it ASAP. If you don’t like it, wait an hour and listen to it again. If you still don’t like it, we probably aren’t compatible.

3. Protein Pancakes

Yesterday morning, I had some extra time before work, so I decided to try out a protein pancake recipe. In the past, I have made protein pancakes with protein powder, and they usually turned out slightly gummy. Not these pancakes! These use Greek yogurt and egg whites instead.

While the recipe needs a few tweaks, the finished product was nearly perfect! Confession: I also made them for dinner.

4. MORE s’mores

Last week, I talked about my amazing s’mores coffee find at Target. This week, I went to Kroger and found another kind of s’mores coffee on clearance!

I didn’t realize Life is good® sold coffee! Now the Life is good® banana nut bread flavor is on my must-try list.

Does anyone understand why s’mores coffee is sold in the summer not fall? I don’t sit around a campfire in the summer and roast marshmallows. Am I missing something?!

Side-note: These peanut butter s’mores cupcakes are even better than the s’mores ground coffee beans.

5. Finding ways to get involved with my community

I keep searching for activities to get involved with in the Indianapolis area. I would really like to join a running group or an outdoor adventure-ish group. Please let me know if you have any names!

This past week I got involved with Girls on the Run and am helping plan its 5k race in November.

Have you heard of Girls on the Run before? It’s a nonprofit for girls in 3rd grade – 8th grade that meets twice a week. Its goal is to empower girls and teach them about success through fun, interactive lessons and running. The program ends with a celebratory 5k!
